Baking poffertjes (mini-pancakes) is a real Dutch tradition. Large copper plates with small dimples are brought to a high temperature. The small dimples, also called caps, are filled with batter and turned upside-down after a short time. When the poffertjes are ready, they are usually served with icing sugar and a curl of butter.
The community consists of poffertjes bakers, poffertjes caterers and its eaters. De Pofferij is a company in baking poffertjes on location.
The baking of poffertjes has actually not changed much over time. Poffertjes were mainly served in characteristic poffertjes stalls at fairs, but now also at festivals, fairs, events and at company parties.
